How to make crispy shredded hash browns

Rinse and dry shredded potatoes, spread a thin layer and let the crust form before turning. A dry surface is the key to a crisp result.

Crisp shredded potato hash brown cake on a plate.

Hash browns need contact with the hot pan. A thick wet pile turns soft before it browns. Make a thin cake or a few smaller portions for an easier first attempt.

The quick answer

Grate potatoes, rinse away loose starch, squeeze very dry and season. Cook in a thin layer in an oiled skillet until golden underneath, then turn and finish the second side.

Before you begin

Wash potatoes and use a stable grater. Keep fingers away from sharp holes. Dry the potatoes well before adding them to hot oil, and turn the pan handle inward.

What you’ll need

  • Box grater
  • Clean sturdy kitchen towel
  • Large skillet
  • Wide spatula

Ingredients

Base batch: 2 side portions

Ingredient amounts scale; oven temperatures and cooking times do not. Split a larger batch between pans when needed.

Use the base batch for your first attempt. Adjust seasoning to taste and check texture as you cook.

Let’s do this

Step by step

0 of 5 steps complete
  1. 01

    Grate and rinse

Peel if desired, then grate on the large holes. Rinse the shreds in cold water and drain. Work promptly so they do not sit wet for a long time.

  2. 02

    Squeeze dry

Bundle in a clean towel and squeeze firmly over the sink. Open and redistribute once to remove more water. Damp shreds are the main obstacle to a crisp crust.

  3. 03

    Form a thin layer

Warm oil in a skillet over medium to medium-high heat. Season the potatoes and spread roughly ½ inch thick or thinner. Press lightly for pan contact without packing into a dense block.

  4. 04

    Leave the first side alone

Cook about 5–7 minutes, adjusting heat so the underside becomes golden without smoking. Lift an edge to check. Constant stirring prevents a continuous crust.

  5. 05

    Turn and finish

Flip in manageable sections and cook the second side until browned and the potato is tender. Reduce heat if the crust darkens before the center cooks. Serve while crisp.

Choose small cakes for easier flipping

Dividing the mixture into two or three cakes leaves room for the spatula and reduces the chance of breaking a large round. Keep their thickness similar so they finish together.

Serve now or store safely

Refrigerate perishable cooked food in shallow containers within 2 hours, or within 1 hour when the room or outdoor temperature is above 90°F. Keep the refrigerator at 40°F or below. Use most cooked leftovers within 3–4 days and reheat to 165°F. Do not wait for a large pot to cool completely on the counter.

A quick final check

  • Grate and rinse
  • Squeeze dry
  • Form a thin layer
  • Leave the first side alone
  • Turn and finish

Common questions & sticking points

Why are mine gray?

Grated potato can oxidize when left exposed. Work promptly and cook after draining and drying.

Can I use frozen shreds?

Yes, but follow the package preparation directions and remove excess surface ice or moisture safely.
