How to make crepes in a skillet

Crepes are easier when you treat the first one as a pan test. The batter should flow quickly into a thin layer. You do not need a dedicated crepe maker or spreader to begin.

Why does the batter set before I can swirl it?

The pan may be too hot. Reduce heat and lift it briefly while adding batter.
