
Brussels sprouts brown best when their surfaces are dry and the pan is not crowded. Halving gives each sprout a flat side to sit against the hot tray.

Rinse and dry the sprouts thoroughly. Remove damaged outer leaves and trim only the dry stem tip, leaving enough core to hold the halves together.

Make even pieces
Heat the oven to 425°F. Halve small or medium sprouts lengthwise; quarter unusually large ones. Keep loose tiny leaves separate because they brown faster.

Coat lightly
Toss with oil, salt and pepper. Aim for a light coating on the cut sides and outer leaves, not a puddle on the tray.

Give them room
Arrange in a single layer, mostly cut-side down. Use a second tray for a larger batch rather than stacking pieces.

Roast and inspect
Roast about 20–30 minutes. Check at around 15 minutes and move or turn pieces if the oven browns unevenly. The center should be tender when pierced.

Finish and serve
Remove when the edges are browned and the centers are cooked. Add lemon after roasting. If using a sweet glaze, apply only near the end and watch closely.

Crisp leaves are different from burnt leaves
A few deeply browned edges add flavor, but blackened papery leaves can taste bitter. Remove small loose leaves early if needed while thicker pieces finish.
Serve now or store safely
Refrigerate perishable cooked food in shallow containers within 2 hours, or within 1 hour when the room or outdoor temperature is above 90°F. Keep the refrigerator at 40°F or below. Use most cooked leftovers within 3–4 days and reheat to 165°F. Do not wait for a large pot to cool completely on the counter.

Common questions & sticking points
Why did they steam?
A crowded tray or wet sprouts hold moisture. Dry well and spread the pieces apart.
Can I use frozen sprouts?
They release more moisture and need a method designed for frozen vegetables. Expect a softer result than fresh halved sprouts.
