How to make French fries in the oven

Oven fries are a practical home version of the familiar side. They will not have exactly the texture of restaurant deep-fried potatoes, but dry surfaces and plenty of tray space give satisfying browned edges.

    Cut potatoes into about ⅜-inch sticks or evenly sized slim wedges. Make a flat face for stability before cutting. Keep fingers away from the blade and avoid forcing a dull knife.

    Rinse loose starch away, drain and pat the pieces very dry. A wet pile on the tray will steam before it can brown.

    Roast about 20 minutes, then turn with a spatula. Continue another 15–25 minutes, depending on thickness and oven behavior. Rotate trays if one side browns faster.
