How to make a smooth cream-style Alfredo sauce

Warm cream and butter gently, add finely grated Parmesan off strong heat and loosen with pasta water. Avoid boiling the cheese.

Smooth Alfredo sauce beside fettuccine coated in creamy sauce.

This is a cream-style home Alfredo, rather than the classic butter-and-cheese-only preparation. It comes together fast, so grate the cheese and cook the pasta before finishing the sauce.

The quick answer

Warm butter and cream, simmer gently to thicken slightly, then lower the heat and stir in finely grated Parmesan. Toss with hot pasta, adding a little pasta water to reach a smooth coating.

Before you begin

Grate a block of suitable Parmesan if possible; pre-shredded products can melt differently. Keep dairy refrigerated. Have hot pasta and a cup of its cooking water ready before the cheese goes in.

What you’ll need

  • Wide saucepan or skillet
  • Whisk
  • Fine cheese grater
  • Pasta tongs

Measure before you start

Ingredients

Base batch: Enough for about 8 ounces dry pasta

Ingredient amounts scale; oven temperatures and cooking times do not. Split a larger batch between pans when needed.

Use the base batch for your first attempt. Adjust seasoning to taste and check texture as you cook.

Let’s do this

Step by step

0 of 5 steps complete
  1. 01

    Prepare cheese and pasta

Grate the cheese finely. Cook pasta and reserve some cooking water before draining. Avoid leaving drained pasta to dry while you start the sauce from scratch.

  2. 02

    Warm the dairy

Melt butter over medium-low heat and add cream. Bring to a gentle simmer, stirring. Cook a few minutes until slightly reduced, without a hard rolling boil.

  3. 03

    Add cheese gently

Reduce heat to low or remove the pan from the burner. Add Parmesan in small handfuls, stirring until each addition melts. Strong heat can make the sauce grainy or separate.

  4. 04

    Toss and adjust

Add the hot pasta and toss. Add reserved pasta water a splash at a time if the sauce is too thick. Season after tasting because the cheese and pasta water already contain salt.

  5. 05

    Serve immediately

Serve while the coating is smooth. If the sauce tightens as it stands, gently loosen with a little warm liquid rather than boiling it hard.

A sauce that coats is better than one that sits in clumps

Stop reducing the cream before it becomes very thick; cheese will add body. Add small amounts of liquid during tossing so the pasta stays coated without swimming.

Serve now or store safely

Refrigerate perishable cooked food in shallow containers within 2 hours, or within 1 hour when the room or outdoor temperature is above 90°F. Keep the refrigerator at 40°F or below. Use most cooked leftovers within 3–4 days and reheat to 165°F. Do not wait for a large pot to cool completely on the counter.

A quick final check

  • Prepare cheese and pasta
  • Warm the dairy
  • Add cheese gently
  • Toss and adjust
  • Serve immediately

Common questions & sticking points

Why is the sauce grainy?

The cheese may have been heated too strongly or may not be a good melting product. Lower heat and add it gradually.

Can I replace cream with milk one for one?

That produces a much thinner sauce. Use a milk-based sauce recipe with its own thickening method.
