How to cook tofu with golden edges

Press extra-firm tofu, dry the surface and brown it in a skillet. Choose the right tofu before using a press or adding sauce.

For browned cubes, extra-firm tofu is the useful starting point. Silken tofu is delicate and belongs in a different method. Drying the outside and leaving space in the pan help the cubes brown instead of steam.

Keep tofu refrigerated before preparation. Press on a stable surface with a manageable weight. Do not press silken tofu or leave perishable ingredients warm for extended periods.

    Drain and press gently

    Wrap the block in clean absorbent towels on a tray. Set a flat plate and modest weight on top for about 15 minutes, or use a tofu press as directed. Avoid crushing the block unevenly.

    Cut and dry

    Cut into roughly ¾-inch cubes and pat the surfaces dry. Similar pieces brown at a similar rate; tiny fragments may burn while large cubes remain pale.

    Heat and arrange

    Warm oil in a suitable skillet over medium-high heat without letting it smoke heavily. Add tofu in one layer with room between pieces. Cook in batches if needed.

    Brown before turning

    Leave the first side alone for a few minutes until it colors and releases more easily. Turn gently and brown several sides, roughly 10–15 minutes total depending on the pan and cube size.

    Add flavor at the end

    Reduce the heat and toss with soy sauce and optional sesame oil. Let excess liquid evaporate briefly, then serve. Add sugary sauces late so they do not burn before the tofu browns.

Use sauce as a finish

Wet marinades and crowded pans make browning harder. You can still marinate tofu in the refrigerator, but drain well before frying and reserve a clean separate portion of sauce for finishing.

Serve now or store safely

Refrigerate perishable cooked food in shallow containers within 2 hours, or within 1 hour when the room or outdoor temperature is above 90°F. Keep the refrigerator at 40°F or below. Use most cooked leftovers within 3–4 days and reheat to 165°F. Do not wait for a large pot to cool completely on the counter.

Common questions & sticking points

Do I need a tofu press?

No. Towels, a plate and a stable modest weight work for a small batch.

Why does it stick?

The surface may be wet or not browned yet. Give it time to release and use an appropriate pan rather than scraping immediately.
