Rinse and drain
Place quinoa in a fine sieve and rinse under cool running water, moving the grains with clean fingers. Drain well so extra rinse water does not significantly alter the pot ratio.

Bring to a boil
Put the quinoa, measured water and optional salt in a saucepan with room for expansion. Bring to a boil, then reduce promptly to a gentle simmer.

Cover and cook
Cover and cook about 15 minutes, or as the package directs. Avoid repeated stirring or lifting the lid. Near the end, check that the grains are tender and most visible liquid is gone.

Rest off the heat
Remove from the burner and leave covered for about 5 minutes. If it is still hard before resting, add a small splash of water and continue the covered simmer first.

Fluff and serve
Lift and separate grains with a fork instead of pressing them with a spoon. Season for a warm side, or cool promptly in a shallow container for later use.

Fix the texture in the pot
Tender but wet quinoa can stand briefly uncovered over very low heat to shed moisture. Dry but crunchy quinoa needs a little more liquid and covered cooking. Avoid adding a large amount at once.
Serve now or store safely
Refrigerate perishable cooked food in shallow containers within 2 hours, or within 1 hour when the room or outdoor temperature is above 90°F. Keep the refrigerator at 40°F or below. Use most cooked leftovers within 3–4 days and reheat to 165°F. Do not wait for a large pot to cool completely on the counter.

Common questions & sticking points
Do I have to rinse pre-rinsed quinoa?
Follow the package. An extra rinse is optional if it is labeled pre-rinsed, but it may help if you notice bitterness.
